For our design team, the redevelopment of Sydney Airport’s Terminal 3 food and beverage precinct was an opportunity to completely reframe the dining experience in a busy transport environment.
Unlike transactional airport food courts, the new T3 precinct is designed as a place passengers look forward to visiting, not simply passing through.
Working with the client, we elevated the retail offer, making it lighter, brighter and more sophisticated – a hospitality-focused space that’s timeless in its architectural expression and resilient in a high-traffic context.
More seating, more choices
We more than doubled seating capacity, fundamentally shifting the ability of the terminal to support longer dwell times while enhancing comfort and a sense of connection.
In parallel, we doubled the food and beverage mix, widening choices and introducing a stronger cohort of premium operators with more contemporary, hospitality-led offers.
Open but ordered, even at peak times
A key design move was ‘soft’ planning within this highly structured operational environment, balancing the clarity and legibility of spaces with ease of movement and occupation.
This was underpinned by a cohesive architectural strategy that aligned bulkheads within the precinct, improved sightlines, and unified the precinct into a clear, readable whole.
The result is a space that feels both open and ordered, even at peak intensity.
Designed for different rhythms
We significantly enhanced amenity for passengers spending more time within the precinct. That includes by embedding power throughout and introducing a diverse range of seating types for individuals, couples, families and larger groups.
This flexibility allows the space to respond to different rhythms of stay, from quick stops to extended visits.
The Terminal 3 food precinct is now a more sophisticated, future-facing hospitality destination. It responds to the realities of a high-traffic airport while setting a new benchmark for what airport food and beverage can be: not just service infrastructure, but a destination in its own right.
